How Coffee Brought Together Agriculture, Conservation and Economic Recovery in Galapagos

I had the most informative and calming guide as I went out to Kicker Rock just off San Cristobal, Galapagos, for my first snorkel in over 10 years. Nicolas Balon was reassuring me that it was fine to swim with hammerhead sharks and I tried to believe him. Then his name was stuck in my head. Nicolas Balon. I decided to ask, “Do you happen to work with the Galapagos Science Center?” He said yes, a little surprised by my question. I followed up with, “Do you also own a sustainable coffee farm that is working in conservation?” His eyes lit up and that is how I ended up on Nicolas Balon’s coffee farm the next morning.
